The coffee world is going through a major transformation these days. There’s been a lot of buzz about the three waves of coffee. The first was filter coffee at home. The second was about the coffee experience at a coffee shop. And the third, which started about 10 to 15 years ago, is about getting good quality coffee at coffee shops and at home.

Over the past three to five years, there’s been a lot of experimentation with flavor. Coffee growers, especially in Colombia, started trying different fermentation processes with green beans. They experimented with different fermentation times (from 12 to 72 hours and beyond) and different types of yeast (natural and yeast inoculation). Then, they started experimenting with co-fermentation by adding fruits, herbs, botanicals, and cocoa nibs. Some coffee shops were selling the experimental co-fermentation coffee as a special new thing. The flavors were really powerful and created unique flavors like pineapple and lychee. It was a bold and new experience.

This new wave of coffee could almost be called the Flavour Wave. This website is all about this new wave of coffee. There have been coffee cocktails, both alcoholic and non-alcoholic, for almost as long as there has been coffee, but they weren’t very creative. Add some Irish whiskey to coffee and call it an Irish Coffee. Put some vodka and espresso in a martini glass and call it an Espresso Martini. You won’t find either of those cocktails on this site.

The site is meant to be a guide for you to explore and discover what flavors you like. Make the cocktail and then refine it based on your tastes and the coffee you have available. We all have different tastes, and there are a variety of coffees out there and different ways that the coffee is made. Enjoy!
